MY GO-TO-SALAD DRESSING

This is the salad dressing to end all salad dressings as far as I’m concerned. Once I started making this one, it’s pretty much the only one I keep in my fridge on a weekly basis with few exceptions. It’s so simple, so satisfying, and your liver will thank you for it.

Makes 1 cup

INGREDIENTS

  • 1/3 cup lemon juice

  • 1/2 cup + 1 tablespoons extra virgin olive oil

  • 1 tablespoon dijon mustard

  • 1 garlic clove or shallot, minced

  • 1 teaspoon sea salt


Place all ingredients in a glass jar with a lid. Cover and shake vigorously until all ingredients are emulsified. Sometimes I also add chopped fresh dill or thyme. Experiment with your favorite spices!
